October is the only month where I cook for a future version of myself. Everything else gets eaten the same day.
What worked
The lemons, as always. Four jars, packed hard, turned every day for a week. By December they are soft enough to use whole and the brine goes into everything.
The harissa was hotter than last year because the chillies were better, which is a problem you should want to have.
What did not
I tried salting green tomatoes because a man at the market had a crate going cheap. Six weeks later they tasted like the inside of a swimming pool. The jar went out and the card went in the bin, which is the only card I have thrown away this year.
