Five hundred grams of strong white flour, three hundred and sixty of water, ten of salt, two of yeast. Mixed at nine at night, shaped at seven, baked at eight.

It is not a sourdough and it does not pretend to be. It is the loaf that gets made when there is no bread and no time, which is most Tuesdays.

What goes wrong

Baking it pale. Take it further than looks sensible; the crust is where the whole thing lives.
